Our Philosophy
A small room with one big idea.
Edam began with a stubborn belief: that a cafe could be more than a place to eat. It could be a room that slows you down. A space where coffee shares the table with paintings and conversation shares the wall with books, where a quiet afternoon feels like a small luxury.
Our pastry kitchen bakes from scratch every morning. Our baristas pour with care. Our walls turn over with new artists, and the books are always being added to. Some of our regulars have been coming here for seven years. Some are meeting us for the first time today.
